  • 1/4 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix the granulated sugar, brown sugar, pumpkin puree, and vegetable oil until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fill the muffin tin with the batter and bake for 20-25 minutes.
  7. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
