Anti Inflammatory Turmeric Chicken Soup

A delicious and healthy recipe for turmeric chicken soup that is anti-inflammatory and nourishing.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast
  • 1 teaspoon turmeric
  • 1 teaspoon ginger, grated
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup carrot, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and carrot. Sauté until softened.
  3. Add the chicken and cook until browned.
  4. Stir in turmeric and ginger.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Add the kale and cook for another 5 minutes.
