Banana Zucchini Oatmeal Muffins

  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, mash the bananas and then stir in the grated zucchini.
  3. Add the rolled oats, flour, brown sugar, honey, baking soda, baking powder, cinnamon, salt, egg, and vegetable oil, mixing until just combined.
  4. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  6. Let muffins cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Notes

  • For added flavor, consider adding chopped nuts or chocolate chips to the batter.
  • These muffins can be frozen for up to three months.
