Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup tortilla strips

Instructions

  1. In a large crockpot, add the chicken breasts, black beans, corn, diced tomatoes, onion, garlic, cumin, chili powder, and chicken broth.
  2. Stir the ingredients to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  4. Remove the chicken, shred it with two forks, and return it to the soup.
  5. Serve hot, garnished with tortilla strips.
