Ingredients

  • 2 ripe avocados
  • 1 medium tomato, diced
  • 4 slices whole-grain bread
  • 2 eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Toast the whole-grain bread until golden brown.
  2. In a bowl, mash the ripe avocados and mix with lemon juice, salt, and pepper.
  3. Spread the smashed avocado mixture over the toasted bread.
