Butternut Squash Soup

Butternut Squash Soup is a comforting dish that’s simple to make. This version with turkey bacon adds a delicious, smoky flavor!

  • 1 medium butternut squash
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. Add onion and garlic to the pot, cooking until soft.
  3. Add diced butternut squash, broth, cumin, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer until the squash is tender, about 20 minutes.
  5. Blend the soup until smooth, then serve with crumbled turkey bacon on top.
