  • 2 cups butternut squash, diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, sauté until softened.
  3. Add the diced butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer until squash is tender.
  4. Blend the soup until smooth, then stir in the heavy cream and season with salt, pepper, and nutmeg.
  5. Serve hot, garnished with crispy turkey bacon.

Notes

  • For a vegetarian version, omit turkey bacon and use olive oil instead.
