Cajun White Chicken Chili

A comforting and hearty dish that combines the flavors of Cajun spices with tender chicken and creamy beans.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) white beans, drained
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn kernels
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken and cook until browned, about 5-7 minutes.
  3. Remove chicken and set aside; in the same pot, add onion and garlic, cook until softened.
  4. Stir in the white beans, chicken broth, Cajun seasoning, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer.
  6. Shred the cooked chicken and return to the pot.
  7. Add corn and heavy cream; simmer for another 10 minutes.
  8. Garnish with cilantro before serving.

Notes

  • Adjust the spiciness by adding more or less Cajun seasoning.
  • Serve with crusty bread for a complete meal.
