Caramelized Leek and Mushroom Gruyere Pasta

Ingredients

  • 2 cups leeks, sliced
  • 1 cup mushrooms, sliced
  • 1 cup gruyere cheese, shredded
  • 8 oz pasta of choice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon thyme

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat. Add leeks and cook until caramelized, about 10 minutes.
  3. Add mushrooms, salt, pepper, and thyme to the skillet. Cook until mushrooms are softened.
