  • 3 large eggs
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix the grated carrots, melted butter, sugars, and eggs until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Once cooled, prepare the brown butter cream cheese frosting and spread it over the cooled cake.

Notes

  • For an extra kick, add chopped nuts or raisins to the batter.
  • Make sure the cake is completely cool before frosting to prevent melting.
