Cheesy Root Vegetable Gratin

  • 2 cups sliced potatoes
  • 1 cup sliced carrots
  • 1 cup sliced parsnips
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced vegetables and season with salt, pepper, and thyme.
  3. Layer half of the vegetables in a greased baking dish.
  4. Sprinkle half of the cheese over the first layer of vegetables.
  5. Repeat the process with the remaining vegetables and cheese.
  6. In a separate bowl, mix the heavy cream with minced garlic and pour it over the layered vegetables.
  7. Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.

Notes

  • For a healthier version, you can substitute regular cheese with reduced-fat cheese.
