Chicken and Chorizo Paella

A delightful and hearty dish bringing together the rich flavors of chicken and chorizo in a traditional paella style.

  • 1 pound chicken thighs, boneless and skinless
  • 8 ounces chorizo sausage, sliced
  • 2 cups Arborio rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 1 cup peas, frozen
  • 2 tomatoes, diced

Instructions

  1. In a large pan, heat some oil and sauté the onion and garlic until translucent.
  2. Add the chicken and chorizo, cooking until browned.
  3. Stir in the bell pepper, tomatoes, and smoked paprika, mixing well.
  4. Add the rice and saffron, stirring to coat the rice with the flavors.
  5. Pour in the chicken broth, bring to a boil, then reduce the heat and simmer for 20 minutes.
  6. In the last 5 minutes, add the peas, allowing them to heat through.
  7. Remove from heat and let sit for a few minutes before serving.

Notes

  • For a spicier twist, add diced jalapeños.
  • Paella is best served hot and fresh.
