Ingredients

  • 1 pound chicken thighs
  • 4 cups chicken broth
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1 cup milk
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced

Instructions

  1. In a large pot, combine chicken thighs and chicken broth. Bring to a boil.
  2. Add carrots, celery, and onion; simmer until chicken is cooked through.
  3. Remove chicken, shred it, and return to the pot.
  4. In a bowl, mix flour, baking powder, and salt. Cut in butter until crumbly. Stir in milk to form a dough.
  5. Drop spoonfuls of dough into the simmering broth. Cook uncovered for 15 minutes, then covered for another 10 minutes.
  6. Serve hot and enjoy!

Notes

  • This recipe can be made with leftover chicken for added convenience.
  • Feel free to add peas or other vegetables to the dumplings.
