Chicken Pot Pie Soup

A delicious and comforting Chicken Pot Pie Soup with a twist of turkey bacon.

Ingredients

  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups diced cooked chicken
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery until soft.
  3. Add garlic and cook for 1 minute.
  4. Stir in flour and cook for another minute.
  5. Gradually add chicken broth, stirring to combine.
  6. Bring to a simmer and add diced chicken, peas, thyme, salt, and pepper.
  7. Reduce heat and stir in heavy cream.
  8. Slice turkey bacon and serve on top of the soup.

Notes

  • This soup is perfect for meal prep and can be frozen for later use.
