  • 1 pound chicken breast, diced
  • 2 cups rice, uncooked
  • 1 tablespoon olive oil
  • 2 tablespoons chipotle sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn, canned or frozen
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced chicken and season with garlic powder, onion powder, cumin, salt, and black pepper. Cook until browned and fully cooked.
  3. While the chicken is cooking, prepare the rice according to package instructions.
  4. Once the chicken is cooked, stir in the chipotle sauce, corn, black beans, and salsa. Cook for an additional 5 minutes.
  5. Serve the chicken mixture over rice and top with shredded cheese and cilantro.

Notes

  • For extra spice, add jalapeños to the dish.
  • Feel free to substitute quinoa for rice for a healthier option.
