  • 1 can (15 oz) kidney beans
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 cup corn, frozen or canned
  • 2 cups chicken broth
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the chopped onion and minced garlic; sauté until translucent.
  3. Stir in the ground turkey, cooking until browned.
  4. Mix in the chili powder, cumin, and smoked paprika, stirring for a minute.
  5. Add the kidney beans, diced tomatoes, corn, and chicken broth to the pot. Bring to a boil.
  6. Reduce heat and let it simmer for 30 minutes.
  7. Season with salt and pepper to taste. Serve warm.
