  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract.
  5. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, until just combined.
  7. Fold in cranberries and pour batter into a greased cake pan.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let cool, then prepare the almond glaze.
  10. For the glaze, mix powdered sugar with almond extract and water until smooth.
  11. Drizzle glaze over the cooled cake and sprinkle with sliced almonds.
