  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 can (10 ounces) diced tomatoes with green chiles
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels, frozen or canned
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup shredded cheese (optional)
  • 1/2 cup chopped cilantro, for garnish
  • tortilla strips, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the shredded chicken, chicken broth, diced tomatoes, black beans, corn, cumin, and chili powder. Bring to a boil.
  5. Reduce heat and let it simmer for about 15 minutes.
  6. Stir in the heavy cream and let it heat through.
  7. Serve hot, garnished with cheese, cilantro, and tortilla strips.

Notes
