Creamy Scallop Pasta

This creamy scallop pasta features a delicious combination of turkey bacon, scallops, and a rich sauce.

Ingredients

  • 8 oz pasta
  • 1 lb scallops
  • 4 oz turkey bacon
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp parsley, chopped

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook the turkey bacon until crispy. Remove and chop.
  3. In the same skillet, add olive oil and garlic, sauté for 1 minute.
  4. Add scallops to the skillet and cook until golden brown, about 2-3 minutes per side.
  5. Pour in the heavy cream and bring to a simmer.
  6. Add Parmesan cheese, cooked pasta, turkey bacon, salt, and pepper. Mix well.
  7. Top with parsley and serve immediately.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
