Creamy Street Corn Pasta Salad

  • 8 ounces pasta
  • 2 cups corn kernels
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon lime juice
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to the package instructions and drain.
  2. In a skillet, cook the turkey bacon until crispy. Chop it into small pieces.
  3. In a large mixing bowl, combine the cooked pasta, corn, crispy bacon, mayonnaise, sour cream, lime juice, cilantro, and red onion. Stir until well mixed.
  4. Season with salt and black pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added flavor, grill the corn before adding to the salad.
