Creamy Tuscan Salmon

A rich and flavorful Salmon dish enhanced with turkey bacon and creamy Tuscan sauce.

Ingredients

  • 2 fillets salmon
  • 4 slices turkey bacon
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes
  • 2 cups spinach
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook the turkey bacon in a skillet until crispy.
  2. Add minced garlic and sun-dried tomatoes to the skillet and sauté for a couple of minutes.
  3. Stir in the heavy cream and bring to a simmer.
  4. Add spinach and Parmesan cheese until the spinach is wilted and cheese is melted.
  5. Push the sauce to the side and place the salmon fillets in the skillet to cook.
  6. Cook the salmon for about 6-8 minutes on each side or until flaky.

Notes

  • Serve with a side of pasta or steamed vegetables.
  • Can substitute chicken for salmon if preferred.
