Crockpot Chicken Birria Tacos

  • 2 pounds chicken thighs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 dried guajillo chili peppers
  • 2 dried ancho chili peppers
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 cups chicken broth
  • 1 bay leaf
  • 8 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Soak the guajillo and ancho chili peppers in hot water until softened, about 15 minutes.
  2. In a blender, combine the soaked peppers, garlic, onion, cumin, oregano, and chicken broth; blend until smooth.
  3. Place the chicken thighs in a crockpot and pour the blended sauce over them.
  4. Add the bay leaf, cover, and cook on low for 6-8 hours or high for 4-5 hours.
  5. Once cooked, shred the chicken with two forks.
  6. Heat the corn tortillas on a skillet until warm.
  7. Assemble the tacos by placing the shredded chicken on the tortillas and top with cilantro and a squeeze of lime.

Notes

  • For added flavor, top with diced onions and extra lime juice.
  • Serve with a side of consomé for dipping.
