Crockpot Chicken Noodle Soup

A warm and hearty soup perfect for any day, made effortlessly in a crockpot.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, carrots, celery, onion, garlic, thyme, and rosemary.
  3. Season with salt and pepper.
  4. Cook on low for 6-8 hours or high for 4-6 hours until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Add the egg noodles and cook on high for an additional 30 minutes, or until the noodles are tender.
  7. Stir in fresh parsley before serving.

Notes

  • For a richer flavor, use homemade chicken broth.
  • Feel free to add other vegetables as desired.
