Crockpot Chicken Tortilla Soup

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 4 cups chicken broth
  • 1 lime, juiced
  • 1 cup tortilla strips
  • 1 cup shredded cheese

Instructions

  1. Place the chicken in the bottom of the crockpot.
  2. Add the beans, corn, tomatoes, onion, garlic, chili powder, cumin, and broth.
  3. Stir the ingredients and cover the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken and stir back into the soup.
  6. Stir in lime juice before serving.
  7. Top with tortilla strips and cheese.
