Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lime, juiced
  • 1 cup tortilla chips, crushed

Instructions

  1. In a crockpot, combine the chicken, black beans, corn, diced tomatoes, chicken broth, onion, garlic, chili powder, cumin, salt, and pepper.
  2. Cook on low for 5-6 hours or on high for 3-4 hours.
  3. Shortly before serving, stir in lime juice.
  4. Serve with crushed tortilla chips on top.
