Crockpot Lasagna Soup

A comforting and easy lasagna soup made in a crockpot, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 12 ounces broken lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet and drain excess fat.
  2. Add onions and garlic to the beef and cook until softened.
  3. Transfer the beef mixture to the crockpot.
  4. Add crushed tomatoes, beef broth, lasagna noodles, ricotta, mozzarella, Parmesan, Italian seasoning, salt, and pepper.
  5. Stir well to combine, then cover and cook on low for 6-8 hours.
  6. Serve hot, topped with additional cheese if desired.

Notes

  • Feel free to add more vegetables like bell peppers or spinach.
  • This soup can be refrigerated for up to 3 days.
