2 pounds boneless, skinless chicken breasts
1 can (28 ounces) crushed tomatoes
1 tablespoon olive oil
1 teaspoon dried basil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
1/4 cup fresh basil, chopped
Instructions
Place the chicken breasts in the crockpot.
In a separate bowl, mix the crushed tomatoes, olive oil, dried basil, garlic, salt, black pepper, and red pepper flakes.
Pour the tomato mixture over the chicken.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Once cooked, shred the chicken with two forks and stir in the fresh basil.
