Easy Asian Cucumber Salad

Ingredients

  • 2 cucumbers
  • 1 teaspoon salt
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle with salt and let them sit for 10 minutes to release moisture.
  3. In another bowl, whisk together rice vinegar, sugar, sesame oil, garlic, soy sauce, and red pepper flakes.
  4. Pour the dressing over the cucumbers and mix well.
  5. Let it marinate for at least 15 minutes in the fridge.
  6. Before serving, sprinkle with sesame seeds and green onions.

Notes

  • For more crunch, add shredded carrots.
  • Adjust the sweetness by adding more or less sugar to taste.
