Easy Chicken and Rice Soup

A warm and comforting chicken and rice soup that’s easy to make.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until tender.
  2. Add chicken broth and bring to a boil.
  3. Stir in the rice, cooked chicken, garlic powder, thyme, salt, and pepper.
  4. Reduce heat and let simmer for 20 minutes, or until rice is fully cooked.
  5. Serve warm.
