  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, half of the enchilada sauce, cumin, garlic powder, onion powder, and salt.
  3. Soften the tortillas by wrapping them in a damp paper towel and microwaving for 30 seconds.
  4. Spoon the chicken mixture onto each tortilla, roll it up, and place seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  6. Bake for 20 minutes until the cheese is bubbly.
