Easy Chicken Enchiladas

Easy Chicken Enchiladas are a delicious twist on comfort food, packed with flavor and perfect for any occasion.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté the onions until translucent.
  3. Mix the shredded chicken with half of the enchilada sauce and half of the cheese.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Place the rolled tortillas in a baking dish and cover with the remaining enchilada sauce and cheese.
  6. Bake for 20-25 minutes until heated through and cheese is bubbly.

Notes

  • For a spicier version, add jalapeños to the chicken mixture.
  • Serve with sour cream and guacamole on the side.
