Easy Chickpea and Potato Curry

A flavorful and easy-to-make chickpea and potato curry that is perfect for any home cook.

Ingredients

  • 2 cups cooked chickpeas
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and sauté until translucent.
  2. Add garlic and ginger, cooking for an additional minute.
  3. Stir in the curry powder and turmeric, allowing the spices to bloom.
  4. Add in the diced potatoes and cook for about 5 minutes.
  5. Pour in the coconut milk and add the chickpeas. Season with salt.
  6. Simmer for 20-25 minutes or until the potatoes are tender.
  7. Serve hot with rice or bread.

Notes

  • For added heat, consider adding a chopped chili.
