- 1 pound ground beef
- 1 can enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- 1 onion, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Preheat the oven to 350°F (175°C).
- In a skillet, heat the olive oil and sauté the diced onion until translucent.
- Add the ground beef, garlic powder, cumin, chili powder, salt, and pepper. Cook until the beef is browned.
- Spread some enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture and some cheese, roll them up, and place seam side down in the baking dish.
- Top with remaining enchilada sauce and cheese.
- Bake for 20 minutes or until the cheese is bubbly.
Notes
