Easy Ground Beef Enchiladas

Ingredients

  • 1 pound ground beef
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the olive oil and sauté the diced onion until translucent.
  3. Add the ground beef, garlic powder, cumin, chili powder, salt, and pepper. Cook until the beef is browned.
  4. Spread some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and some cheese, roll them up, and place seam side down in the baking dish.
  6. Top with remaining enchilada sauce and cheese.
  7. Bake for 20 minutes or until the cheese is bubbly.

Notes

  • For extra flavor, add black olives or jalapeños as toppings.
  • These enchiladas can be made ahead of time and stored in the refrigerator before baking.
