  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup canned pumpkin puree
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. In another bowl, combine pumpkin puree, milk, vanilla extract, and egg.
  5. Add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Turn the dough onto a floured surface and knead gently. Shape into a disk and cut into wedges.
  7. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  8. Let cool on a wire rack before serving.
