  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine mashed bananas and melted butter.
  3. Mix in baking soda and salt.
  4. Add sugar, egg, and vanilla extract, and mix well.
  5. Stir in flour, rolled oats, and nuts (if using) until just combined.
  6. Pour the batter into a greased loaf pan.
  7. In a separate bowl, mix brown sugar, cinnamon, and any remaining nuts to create the streusel topping.
  8. Sprinkle the streusel mixture over the batter.
  9. Bake for 60-65 minutes or until a toothpick comes out clean.
