- 1 pound ground turkey
- 4 slices turkey bacon, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 2 bell peppers, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked brown rice
- 1/4 cup chopped parsley, for garnish
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the ground turkey to the pot and cook until browned.
- Add onion and garlic, and sauté until the onion is translucent.
- Stir in the bell peppers and cook for a few more minutes.
- Add the diced tomatoes, vegetable broth, Italian seasoning, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the cooked brown rice and let it heat through.
- Serve with the crispy turkey bacon on top and garnish with parsley.
