Easy Stuffed Pepper Soup Recipe

  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked brown rice
  • 1/4 cup chopped parsley, for garnish

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the ground turkey to the pot and cook until browned.
  3. Add onion and garlic, and sauté until the onion is translucent.
  4. Stir in the bell peppers and cook for a few more minutes.
  5. Add the diced tomatoes, vegetable broth, Italian seasoning, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Stir in the cooked brown rice and let it heat through.
  8. Serve with the crispy turkey bacon on top and garnish with parsley.

Notes

  • For a spicier soup, add red pepper flakes.
  • Try adding different colored bell peppers for a vibrant look.
