1 cup feta cheese
1 cup apricot preserves
1 package puff pastry sheets
1 egg, beaten
1 tablespoon fresh thyme
1/4 teaspoon black pepper
Instructions
Preheat the oven to 400°F (200°C).
Roll out the puff pastry on a floured surface.
Cut the pastry into squares.
In a bowl, mix the feta cheese, apricot preserves, thyme, and black pepper.
Place a spoonful of the filling in the center of each pastry square.
Fold the pastry over to form triangles and seal the edges.
Brush the tops with beaten egg.
