  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 cups sliced onions
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the beef roast with salt and pepper, then sear it on all sides until browned.
  4. Remove the roast and set aside. In the same pot, add sliced onions and sauté until caramelized.
  5. Add garlic and cook for an additional minute.
  6. Pour in beef broth and Worcestershire sauce, scraping up any browned bits.
  7. Return the roast to the pot, sprinkle with thyme, cover, and place in the oven.
  8. Cook for 3 hours, or until the meat is tender.
  9. Remove from oven and let rest before slicing.
