  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brewed coffee, cooled

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, spices, and salt.
  3. In another bowl, cream the butter and sugars until light and fluffy.
  4. Add the egg, vanilla, and coffee, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Drop tablespoon-sized balls of dough onto a baking sheet.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Allow to cool on the pan for a few minutes before transferring to a wire rack to cool completely.
