Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll tablespoon-sized dough into balls, then roll in granulated sugar.
  7. Place on a baking sheet and flatten slightly.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a spicier cookie, add more ginger or even a pinch of cayenne pepper.
  • Can be stored in an airtight container for up to one week.
