- 1/2 cup almond flour
- 1/2 cup oat flour
- 1/4 cup honey
- 1/4 cup coconut oil
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the pumpkin puree, almond flour, oat flour, honey, coconut oil, eggs, and vanilla extract until smooth.
- Add in the baking soda, pumpkin pie spice, and salt, and mix well.
- Line a muffin tin with liners and pour the batter evenly into each liner.
- Bake for 20-25 minutes or until a toothpick comes out clean.
