Gluten Free Pumpkin Muffins (High Protein)

Delicious gluten free pumpkin muffins that are high in protein, making them a perfect healthy snack.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/2 cup oat flour
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the pumpkin puree, almond flour, oat flour, honey, coconut oil, eggs, and vanilla extract until smooth.
  3. Add in the baking soda, pumpkin pie spice, and salt, and mix well.
  4. Line a muffin tin with liners and pour the batter evenly into each liner.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cool before serving.

Notes

  • For a sweeter muffin, you can add more honey.
  • These muffins can be stored in an airtight container for up to a week.
