Guinness Chocolate Cake with Irish Buttercream

  • 1 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups heavy cream
  • 1 cup powdered sugar
  • 1/2 cup Irish cream liqueur

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the Guinness and cocoa powder.
  3. In a separate bowl, whisk together flour, sugar, baking soda, and salt.
  4. Add the Guinness mixture and the softened butter to the dry ingredients and mix until well combined.
  5. In another bowl, beat the eggs with vanilla, then add to the cake batter.
  6. Pour the batter into greased cake pans and bake for 30-35 minutes.
  7. For the buttercream, whip heavy cream until soft peaks form, then gradually mix in powdered sugar and Irish cream liqueur.
  8. Once the cakes are cool, frost with the Irish buttercream.
  9. Decorate as desired and serve.
