Hazelnut Shortbread Sandwich Cookies with Milk Chocolate Ganache Recipe

Delightful hazelnut shortbread cookies filled with rich milk chocolate ganache.

Ingredients

  • 1 cup hazelnuts, toasted and finely chopped
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup milk chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add vanilla extract and salt, mixing well.
  4. Gradually add in the flour and toasted hazelnuts until well combined.
  5. Roll the dough into small balls and place them on a baking sheet, flattening slightly.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Let cool completely before filling with ganache.
  8. To make the ganache, heat heavy cream until just boiling, then pour over chopped chocolate.
  9. Stir until smooth and let it cool slightly.
  10. Spread or pipe ganache onto half of the cookies and top with another cookie to form a sandwich.

Notes

  • For a richer flavor, use dark chocolate ganache instead of milk chocolate.
  • Chill the cookies after assembling for a firmer texture.
