Healthy Chicken Pot Pie Soup

A delicious and healthy twist on classic chicken pot pie, featuring turkey bacon for added flavor.

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until translucent.
  2. Add carrots and celery; cook for 5 minutes until softened.
  3. Stir in the shredded chicken, chicken broth, potatoes, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 15 minutes or until potatoes are tender.
  5. Stir in the peas, heavy cream, and turkey bacon. Cook for an additional 5 minutes.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a gluten-free version, use gluten-free flour for thickening.
  • Feel free to add other vegetables such as corn or green beans.
