1 pound boneless, skinless chicken breast, diced
1 cup carrots, diced
1 cup celery, diced
1/2 cup onion, chopped
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 cup frozen peas
1 cup potatoes, diced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 cup milk or dairy-free alternative
1/4 cup flour (or gluten-free alternative)
Instructions
In a large pot, heat olive oil over medium heat. Add diced chicken and sauté until cooked through.
Add carrots, celery, onion, and garlic. Cook until softened.
Stir in chicken broth, peas, potatoes, thyme, and rosemary. Bring to a boil.
