  • 8 ounces whole wheat pasta
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 cups spinach

Instructions

  1. Cook the pasta according to package directions until al dente.
  2. In a large skillet, cook turkey bacon over medium heat until crispy. Remove and chop.
  3. Add olive oil, onion, and garlic to the skillet. Sauté until softened.
  4. Add diced tomatoes, heavy cream, Italian seasoning, salt, and pepper. Stir well.
  5. Let the sauce simmer for 5-7 minutes.
  6. Stir in the Parmesan cheese and spinach, then add the cooked pasta and bacon.
  7. Toss until combined and heated through. Serve warm.
