Healthy Creamy Tuscan Sausage Pasta

  • 12 ounces whole wheat pasta
  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in the spinach and cook until wilted.
  5. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese and season with Italian seasoning, salt, and pepper.
  6. Add the cooked pasta to the skillet and toss to combine.
  7. Serve warm, garnished with extra Parmesan if desired.
