- 1 cup Greek yogurt
- 1 cup pumpkin puree
- 1/2 cup honey or maple syrup
- 2 eggs
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mix the Greek yogurt, pumpkin puree, honey, and eggs until smooth.
- In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop the batter into the muffin tin and fill each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
