Healthy Greek Yogurt Pumpkin Muffins

  • 1 cup Greek yogurt
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix the Greek yogurt, pumpkin puree, honey, and eggs until smooth.
  3. In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Scoop the batter into the muffin tin and fill each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
