  • 6 slices turkey bacon
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and sauté spinach and tomatoes until tender.
  3. In a separate pot, boil water and poach the eggs for about 3-4 minutes.
  4. Assemble the bowls with quinoa, sautéed vegetables, and bacon on top. Add poached eggs.
  5. Season with salt and pepper before serving.
