Healthy Mexican Street Corn Pasta Salad

A delicious and nutritious take on the classic Mexican street corn, this pasta salad features a Turkey Bacon twist for added flavor.

Ingredients

  • 8 ounces pasta of your choice
  • 2 cups corn, fresh or frozen
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 cup lime juice
  • 1/2 cup Greek yogurt

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then crumble.
  3. In a large bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, cilantro, and crumbled bacon.
  4. In a separate bowl, mix the chili powder, cumin, salt, lime juice, and Greek yogurt until well combined.
  5. Pour dressing over the salad and toss to combine.
  6. Chill in the fridge for at least 30 minutes before serving.
